Who doesn't love a tasty little blueberry muffin? They're usually sweet, with a hint of lemon, maybe a chocolate chip, and because they've got blueberries (a fruit known for its antioxidant power) it's oh so easy to convince ourselves that they're healthy! But guess what, they aren't. Blueberry muffins most often are high in sugar content and inflammatory grains (the ones that are linked with obesity & chronic disease), not to mention low in any actual antioxidants because if you're not the one making them, there's no way of being sure they didn't just pump in some artificial blueberry flavor instead of giving you the real thing. Preposterous, I know.
Have no fear, I've got the solution. Blueberry muffin bites. Energy balls are all the rage right now and these little bite sized snacks, are full of healthy fats and sweet dates (aka nature's candy) as well as that blueberry muffin flavor we all love! These version is peanut free and actually has hidden dried apples & strawberries, as well as an extra protein boost. Try to get the real deal on the dried blueberries. Those blueberry flavored dried cranberries are artificially flavored & sweetened, which just doesn't cut it. Look for dried wild blueberries instead. I like Steve's Paleo Goods dried fruit.
Blueberry Muffin Bites
Makes 20-24 bites
- 2 cups nuts (I used almonds, cashews, & walnuts)
- 1 cup dates, pitted & rough chopped
- 1/2 cup dried blueberries
- 1/4 cup dried apples
- 1/4 cup dried strawberries
- 1 1/2 tsp vanilla extract
- zest of 1 lemon
- juice of 1/2 lemon
- 2 scoops Progenex More Muscle, chocolate (*optional)
- 1/4 tsp salt
Add nuts to a food processor and pulse until pea sized. Add in dates & dried fruit; pulse until everything is broken down & combined.
Add in lemon zest, juice, & vanilla. Pulse a few more times. Finally, add in protein & salt. Process until all ingredients have come together. The whole thing will form into something of a giant sticky ball.
Roll into small bites and store in the refrigerator.
