I am quite the protein lover. I believe that the best form of protein is protein from other animals (aka chicken, meat, eggs, etc) and that we should have some at every meal. That being said, I know that not everyone agrees with me and even those that do, sometimes need a break from all that heavy protein. Thus, the avocado chickpea smash was born. It's a chicken salad mock up made from smooshed chickpeas (pretty high in protein for being plant based) and smooth creamy avocado. It's tasty in a sandwich or on cucumber and crackers. It's my best alternative for when you just can't fit in another egg or chicken leg.
Avocado Chickpea Smash
- 1/2 can chickpeas, drained & rinsed
- 1/2 tablespoon chopped red onion
- squeeze of lemon
- salt & pepper
In a bowl smash chickpeas and avocado together with a fork, potato masher, or your hands. Stir in red onion. Add a squeeze of lemon juice and salt/pepper to taste. Easy peasy!
Goes great with some toast, spinach & mozzarella.
