In this day and age french fries come in many forms. You can go classic or sweet potato, zucchini or carrot, there are even chicken fries out there. Here is a recipe for sweet and tender butternut squash fries, perfect for all your fall and winter fry needs. You can eat these as a side dish or as a daytime SNACK. That's right, you'd probably snack on regular fries, so why not snack on healthy fries. These are healthy, starchy carbohydrate which means they are perfect as a post workout snack. Pair with a little protein and you're good to go!
These fries are baked in the oven, so there're no bad oils to worry about. They are sweet and salty, but not too much of either and a great source of vitamin a & beta-carotene. These are also the perfect way to introduce butternut squash to any hesitant butternut squash try-ers.
Butternut Squash Fries
- 1/2 butternut squash, skin peeled, seeds removed, and cut into “steak fries”
- olive oil
- salt and pepper
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- pinch of nutmeg
Preheat oven to 425 degrees F. In a bowl, toss to coat squash with a splash of olive oil, a sprinkle of salt and pepper, cinnamon, nutmeg, and cloves. (you can adjust measurements of spices based on taste or the amount of squash you have) Line a baking sheet with tin foil and lay out squash fries on top. Bake until tender, fragrant, and browned (about 40 minutes).
