You don't hoard pumpkin seeds? Oh that's alright! Just go out and grab some cause you're gonna want to make these cocoa roasted pumpkin seeds.
They are sweet, chocolatey, goodness all wrapped up in a crunchy little bite. Perfect for kids and adults alike!
Cocoa Roasted Pumpkin Seeds
- Seeds from one 3lb pumpkin, rinsed & dried with a paper towel (roughly 3/4 to 1 cup of seeds)
- 1 small egg white, lightly whisked
- 2 tablespoons cocoa powder
- 2 tablespoons raw sugar
Preheat the oven to 300 degrees F. Toss the seeds with the egg whites. Toss in cocoa and sugar and mix until they are evenly coated. Spread the seeds on a baking tray (probably best to line the tray with parchment paper) and roast in the oven for 20 minutes, flipping once. Take them out and let cool before transferring to a bowl. Enjoy!
