Don't let your chicken get boring!
Give it an upgrade with a lemon dijon marinade and get your family excited about chicken for dinner again!
Lemon Dijon Chicken
2 lemons, 1 juiced and zested, 1 cut in half
1/2 cup dijon mustard
1 tbsp chopped fresh rosemary
1/2 tsp crushed red pepper
1 clove of garlic, minced
4 chicken breasts, boneless, skinless
In a ziplock bag, combine the lemon zest and juice, mustard, rosemary, red pepper, garlic, and a pinch of salt. Mix together and add in a tablespoon or two of olive oil to loosen up the mixture. Place chicken breasts in the bag and let this marinate in the refrigerator for at least 2 hours or up to overnight.
In a large saute pan over medium heat, cook chicken breasts with 1 tablespoon olive oil. If you'd prefer, you could also preheat a grill and grill the chicken breasts to get nice grill marks until cooked through. When the chicken is almost done cooking place lemon halves cut side down on the pan or grill to caramelize. Remove it all when done and you’ve got yourself a delicious lemon chicken dinner.
