Light and crisp, this salad is packed with flavor AND so easy to make. It doesn't require any cooking at all! You just chop, leave, come back and eat :D Perfect after all that cooking I know you did this Thanksgiving!
Raw Asparagus & Red Onion Salad
- 1 bundle asparagus, woody stems removed
- 1 small red onion, fine dice
- 3/4 cup parmigiano reggiano cheese
- 1/3 cup red wine vinegar
- kosher salt
Cut the asparagus into very thin rounds and place in a bowl. Toss with the onion and cheese. Drizzle the asparagus with some extra virgin olive oil, and vinegar. Toss it all together and season with salt.
Now go get eating!
