Today's healthy snack recipe is revolutionary. Muffins made of vegetables. Yes that's right, absolutely ZERO grains in these muffins. They're made from sweet potatoes (you know, that wonderful starchy carb I'm always blabbing on about, full of vitamins & minerals). Not only that, but they are made in a blender or food processor, poured into tins & baked for just 20 minutes! Hello easy peasy snack time!
These muffins are grown up & kid approved! I brought them into CrossFit Kids as a healthy snack and they were gone in seconds! Even the pickiest of eaters will be asking for seconds.
Sweet Potato Blender Muffins
- ¾ cup mashed sweet potato
- 2 medium bananas
- 2 large eggs
- 2/3 cup almond butter
- ¼ cup + 2 tablespoons maple syrup
- 1 ½ teaspoons cinnamon
- ¾ teaspoon ground ginger
- ½ teaspoon allspice
- ¼ teaspoon nutmeg
- 2 teaspoons baking powder
Preheat the oven to 350 degrees. Grease a muffin tin.
Place all ingredients except baking soda in a blender. Blend on high until smooth. Add the baking powder and blend on low until combined.
Pour the batter into the muffin tin, filling each cup ¾ of the way full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
