As you guys can probably tell, I'm all about the healthy fats, especially at snack time! That's why one of my favorite snacks is smooth & creamy almond butter. It's got healthy Omega-3's and toasted nutty flavor in an easily spreadable form... perfect. You can get some pretty good almond butter in the stores, but a lot of them have unnecessary added ingredients like cane sugar or are loaded with salt. Good news is, almond butter is so easy to make right at home as long as you've got almonds, a food processor, and a little bit of time.
Here's my recipe for perfect almond butter. It's so easy and way cheaper than the store bought stuff. You'll need a little patience, but it'll be worth it.
Homemade Almond Butter
MAKES 1.5 CUPS
- 3 cups almonds
- pinch salt
Preheat the oven to 350 degrees F. Rough chop your almonds and spread on a baking sheet. Toast for for roughly 8-10 minutes or until beginning to become golden and warmed.
Transfer almonds to food processor, throw in a pinch of salt, cover with lid, & let the processing begin. You're going to process for about 20 minutes, stopping and scraping down the sides periodically. Don't get discouraged, it takes time. The almond butter is ready when the oils have released and you get a super smooth, creamy spread.
Transfer to a glass jar & keep stored in the refrigerator.
