There are a few staples that every entertainer needs. Dishes that you can throw together in a pinch to please a hungry crowd. My favorite is guacamole. Now if you're anything like me you might like to eat in-season. No, the ingredients for this guac are not necessarily in-season on this present December day. You could save this recipe, tuck it away until the weather begins to warm up, and drool over it until then. Or, you could abandon that for just a moment and bring summertime flavors to your chilly December afternoon. The choice is yours and I'll support you either way.
Great guacamole is as simple as 5 fresh ingredients. You need tender avocados, juicy limes, bright red tomatoes, the peppery bite of red onion, and a healthy dose of salt. With these you get beautifully delicious guac that can be added to or kept simple. Guac is one of those anytime sides. Great at breakfast, lunch, dinner, and snack time, guac adds omega-3 fatty acids and a kick of flavor to even the most mundane of meals.
- 2 ripe avocados, peeled & pit removed
- juice of 1/2 a lime
- 1/4 red onion, diced
- 1 tomato, diced
- pinch of salt
Scrape your avocado into a bowl. Squeeze the lime juice over the avocado and smash with a fork until smooth. Stir in the onions, tomato, and a pinch of salt. Taste and adjust the seasoning with salt or more lime depending on taste. This is your base. Delicious on its own and great with add ins like mango or cilantro!
