You see all that simple, yet stunning beauty, right? Making these toasts for breakfast, a midday snack, or as a part of your holiday party menu will be one of the easiest decisions you make... probably ever. All you need is some crusty whole grain toasts, ripe avocado, a seasoning or two, & a fried egg.
Avocado toast is kind of a big deal right now. You see them almost everywhere these days, but what a lot of them are missing is a great quality protein on top. That's why I chose a half of a fried egg to top my little bites, but it'd be so easy to top them with a hunk of your favorite style steak or chicken. Don't think that shrimp would be out of the question either! Make these your own and amaze everyone.
This is a pretty loose recipe. Season one, taste, and adjust from there.
Mini Avocado Toasts w/ Fried Eggs
6 MINI TOASTS
- 6 small slices multigrain italian bread (Roughly half a baguette)
- 1 large avocado
- juice from 1/3 lemon
- salt & pepper
- crushed red pepper
- 2 fried eggs (over easy is too messy here, I did over medium or over hard aka almost all the way cooked through)
Turn on your oven broiler and toast the multigrain bread slices on a baking sheet until golden. Flip and toast on the other side. Remove & let cool.
Remove the skin & pit of the avocado. Cut into 6ths. Place avocado onto each toast and mash lightly with a fork. Drizzle with lemon juice and sprinkle with just a pinch salt, pepper, and crushed red pepper.
Cut your fried eggs in half and top four of the toasts with eggs. Leave the rest eggless for an assortment, or make one more egg to top them all.
