Sometimes a new twist on an old favorite is just what you need to get you through the day. That's why today's 25 days of snacks recipe is one for Baked BBQ Potato Chips! We've done the good ol' sweet tater chip, but this recipe replaces orange sweet potatoes with white sweet potatoes and swaps in some kickin' spices to give these crisps a bbq feel. Perfect for when you need to mix things up.
Baked BBQ Chips
- 1 monster white sweet potato (or 2 small), peeled
- 1.5 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
Place two baking sheets in the oven and preheat to 425 degrees F. Thin slice your potato into rounds with a mandolin or very sharp knife (remember to BE CAREFUL). Place your sweet potato rounds in a large bowl & toss to coat with 1 tablespoon olive oil, paprika, chili powder, and salt. Add in the rest of the olive oil only if needed.
Place rounds on your preheated baking sheets and place into the oven, Bake for 5 minutes. Switch trays if one is above the other and bake for another 5 minutes or until potatoes have crisped up and are a beautiful golden brown. Careful not to let burn.
Remove from oven and transfer potato chips to a paper towel lined plate.
