Are you tired? Feeling run down? Groggy even? Are you underperforming? Under-recovering? Are you sad? Feeling like things could be better? For some reason, I was feeling all those things this morning... until I made this oatmeal. I'll spare you of all the details, but I really was tired. I've been working out pretty hard, waking up pretty early, and not getting good sleep at all. I was so sore. So sore. Any ideas why? ... I know... I wasn't eating enough. It's easy to slip into, especially when I'm busy and my appetite is iffy. My body didn't have the means to repair itself, which left me achey, tired, and moody. Not the person I like to be, but have no fear, I was just one comforting bowl of carrot cake oats away from getting back to my old self.
OKAY, maybe that's a bit of an exaggeration. This oatmeal won't cure all your problems, but it's a great step in the right direction, especially when you're feeling run down. It's got good starchy carbohydrate (which your body needs, especially if you're feeling sore or slow on recovery), as well as healthy omega 3's. Add some egg whites & protein powder and you could even make this a serious muscle-maker-one-bowl meal, or eat your eggs on the side like I did. Either way. you're gonna love the dessert for breakfast feel of these oats!
Carrot Cake Oatmeal
- 1/2 cup gluten free oats
- 1 cup milk + splash
- 1/2 tsp vanilla
- 1 tbsp raisins
- 1/2 cup grated carrots
- 1 tsp cinnamon
- 1 tbsp chopped walnuts
- pinch sea salt
- 1/4 banana, mashed *optional
- dollop of greek yogurt *optional
In a small saucepan over high heat, bring your milk to a boil. Stir occasionally so that milk does not burn or over flow. Once boiling, add oats and reduce to a simmer. Let cook, stirring occasionally, until most of the milk is absorbed and oats are tender.
Stir in vanilla, raisins, carrots, cinnamon, walnuts, and a pinch of salt until thoroughly combined. If you need a little sweetness, mash up 1/4 of a banana in your bowl, pour your oats over the banana & stir together. Top with a dollop of greek yogurt or a splash more of milk for a creamy, decadent feel. Enjoy, and get back to being you.
