If you want a kick-booty game day spread that everyone will love AND that you can feel good about serving, I've got to let you in on a little secret. The key is to make healthy junk foods. That's right, healthy versions of classic game day fare is the best way to your guests hearts & stomachs. No one wants obviously healthy food when they're watching sports. They want pizza & wings & potato skins. They want buffalo chicken & bbq sauce smothered everything. Luckily, I'm not the only one catching onto this trend & you can find healthy versions of all your favorite game day junk foods all over this glorious thing called the interweb. One of my personal favorites are these sweet potato skins topped with cheese & guacamole.
A.) Sweet Potatoes are awesome. They're a deliciously filling, healthy carbohydrate chock full of vitamins & minerals. B.) Cheese is awesome. It's ooey, gooey, and makes just about everything taste better. C.) Guacamole is awesome. It's literally avocado in its best possible form and bursting with healthy omega 3 fatty acids.
It's basic math here people A + B + C = These Sweet Potato Skins Are Amazingly Awesome.
Game Day Sweet Potato Skins
- 3 small/medium sweet potatoes
- 1/3 cup cheddar cheese
- salt & pepper
Preheat your oven to 375 degrees F. Rinse off any dirt from sweet potatoes, pat dry. Place potatoes on a baking sheet, poke each twice with a fork and bake in the oven for 1 hour.
Remove potatoes from oven & let cool enough to handle. Cut potatoes in half & scoop out some of the insides. season with salt & pepper, top each with some cheese, and return to oven turned up to 450 degrees F. Cook until cheese is melted & potato begins to brown. Finish under broiler to get the perfect crispy sweet potato skin. Remove, top with guac, & serve.
