This recipe was made with superbowl sunday in mind. Tender little zucchini matchsticks, dredged in egg, covered in a parmesan cheese studded breadcrumbs, and baked in the oven until perfectly crisped are the healthy addition your superbowl spread has been begging for. Staples are staples, we can't fight that. There are, without doubt, going to be unhealthy choices come game day, but that doesn't mean we can't let our veggies steal the spotlight!
These are a little messy to make. Keep your hands clean, get in there, and have fun with it. I brought these fries to my crossfit kids class as the ultimate test of crowd-please-ability. They were gone within minutes! The girls devoured them with a little array of dipping sauces and most of them said they would have loved them without the bbq sauce and pesto sides. If that isn't proof these will be a hit, then I don't know what is.
Baked Zucchini Fries
- 1.25 c breadcrumbs (plain, whole wheat, gluten free, whatever your heart desires)
- 1/3 c grated parmesan cheese
- 1 t salt
- 2 t paprika
- 3-4 medium zucchini, cut into matchsticks
- 2 eggs
- 2 T water
- cooking spray
Preheat your oven to 400 degrees F. Grease two baking sheets with cooking spray. Combine breadcrumbs, cheese, salt, and paprika in a shallow bowl. In a separate shallow bowl, combine the eggs and water, whisk until thoroughly incorporated.
Set up your working station. I find it best to have zucchini all the way to the left with the egg mix bowl to the right of it, the bread crumbs and cheese to the right of that, and the greased cookie sheets furthest to the right. This way we minimize mess and touching the entire kitchen with egg soaked fingers.
Take each zucchini matchstick, dredge in egg, then roll in bread crumbs, and finally place on the baking sheet. When you fill each sheet, spray tops of the zucchini with the cooking spray and place in the oven for 20 minutes or until golden, crisped, and cooked through.
Remove from the oven & serve with pesto, bbq, ketchup, mustard, or nothing at all! They're good hot & cold and hold up well for leftovers.
