We're going easy peasy with todays chicken recipe. We bought chicken already trimmed & sliced into cute little tenderloins, we threw them into a big plastic bag with a simple marinade, we let them sit, we grilled them up, and then we ate them all.

Be Better Balsamic Chicken
Makes 8-10 servings
- Roughly 4 pounds chicken tenderloins (or chicken breasts sliced into thin tenderloins)
- 4 tbsp dijon mustard
- 1 cup balsamic vinegar
- 1/2 cup olive oil
- juice of 1 lemon
- 2 tbsp dried rosemary
- 4 cloves garlic, minced
- salt & pepper to taste
1. MARINATE THE CHICKEN. In a medium bowl, whisk together the mustard, vinegar, oil, lemon juice, rosemary, garlic, salt & pepper. Place chicken and marinade in a large gallon zip lock bag, seal tightly and shake it around to cover all the chicken. Let marinate in the fridge for at least 3 hours or up to overnight.
2. GRILL THE CHICKEN. Preheat your grill on medium. Place chicken on your grill & cover. Let cook for 5 minutes on one side or until you get some nice grill marks & flip. Cook for another few minutes until chicken is cooked through. Remove.
3. EAT THE CHICKEN.
