It's really hard to find healthy store bought jams & jellies. Like, really hard. They've all got fillers and loads of added sugar. Honestly, I sometimes even question the integrity of the fruit used. That being said, I'm a jam girl. I love some jelly spread on my pancakes, swirled into a cake, or sandwiched between some peanut butter & bread. I can make healthy versions of all those other things, but I struggled with the jam... until now!
Enter the blueberry chia seed jam. Real fruit, minimal all natural honey, a squeeze of lemon, & the magical jelling powers of chia seeds. Viola, healthy jam you don't have to feel bad about spreading all over your next batch of oatmeal... (hint hint recipe coming soon :D)
Blueberry Chia Seed Jam
- 2 cups berries (you could do just blueberries like I did or a combo of berries)
- 1/2 tablespoon honey
- juice of 1 lemon wedge (roughly 1 tablespoon)
- 3 teaspoons chia seeds
In a small saucepan, heat the berries over medium high heat. Let cook, stirring occasionally until berries begin to break down & form their own syrup (5-10 minutes). Remove from heat & smash with a fork or the back of a spoon. If you really want a smooth jam you could even puree the berries here.
Stir in the honey, lemon, and chia seeds & let stand for 5 minutes, stirring once after 3 minutes. The chia seeds should plump up & you should get a jelly consistency. I love chunky jam so I leave my berries just smashed and the chia seeds whole but you could even puree the whole thing for a smooth jelly. Store in a glass container (like a mason jar) in the fridge for up to 2 weeks.
*PS this stuff gets even better (thicker) after it's in the fridge for a little while!
