Well isn't this the cutest take on a fruit & yogurt parfait you've ever seen? Homemade jam, cinnamon studded greek yogurt, & fresh fruit in a fun & crunchy cup!
I love coming up with healthy snack ideas for my CrossFit Kids class and when I came across this one for fruit & yogurt in a crispy wonton wrapper cup, I just knew it would be a hit. My kiddo's love when I can get a variety of textures into one snack (as do I) and get to be food detectives to figure out what's inside.
These textures & flavors just work so perfectly together. Make these to satisfy a sweet tooth & up fruit intake. Plain greek yogurt adds some protein without all the added sugars. These cups are the wholesome treat you didn't even know you needed.
Crispy Crunchy Fruit & Yogurt Cups
Makes 12 Mini Cups
- 12 wonton wrappers
- 1 tablespoon kerrygold butter
- homemade strawberry chia seed jam
- 8 oz plain greek yogurt
- splash vanilla extract
- 1 tsp cinnamon
- fresh fruit (I used sliced kiwi, blackberries, & blueberries)
Preheat the oven to 325 degrees F. Press wonton wrappers into mini muffin tins. Melt butter & mix with 1/2 tsp cinnamon. Brush wontons with melted cinnamon butter. Bake for 12 minutes or until golden & crisp. Remove from muffin tins & let cool on wire rack.
In a small bowl mix together yogurt, vanilla, and remaining cinnamon until incorporated. In each wonton cup, place a small amount of strawberry jam in the bottom, a dollop of yogurt on top of that, & then garnish with sliced fruit.
Unfortunately these cute little bites are not so Be-Better-Challenge-Friendly for all my Jersey Devil CrossFitters out there, but they are kid tested & approved as a fun & healthy treat!
