I LOVE a good stir fry. Something about that mix of fresh veggies, peppers with snap peas, broccoli & zucchini side by side, the beautiful assortment of colors that ends up on your plate. It's everything I want in an anytime dish. HOWEVER, most stir fry's are weighed down with overly processed, heavy, salt filled, sugar laden sauces that almost negate the beautiful arrangement of veggies in your dish.
Don't fall for it. Instead make this naked chicken stir fry with hints of the flavors you love in a traditional stir fry, but with a shining spotlight on the freshness of the meat & veggies instead of the overbearing sauces.
*You can use any veggies in a stir fry. I happened to be at whole foods and saw a combo that was already chopped & packed for me, but you could definitely use this as the perfect opportunity to use up whatever you have left in the fridge at the end of your week. My mix was chopped red onion, bell peppers, broccoli, zucchini, and snap peas.
**This dish also came together really quickly because I had leftover Be Better Chicken in the fridge, chopped that up, & tossed it in. If you don't have any leftover protein, just grill some up or pan fry that prior to adding in your veggies.
Naked Chicken Stir Fry
- 1 tablespoon coconut oil
- 2 cups stir fry veggies
- 4-6 oz chicken (or steak), grilled
- 1 tsp grated ginger
- 1-2 tsp chopped fresh cilantro (depending on taste)
- 1/2 tbsp grassfed butter
- splash liquid aminos ** optional
In a medium saucepan over high heat melt the coconut oil. Once hot, add in veggies & stir frequently until cooked through and beginning to get that beautiful golden "stir fry" brown around the edges. Throw in chicken, ginger, cilantro, butter, and a splash of liquid aminos (if desired). Stir until chicken is hot & flavors have incorporated. Remove. Serve. Eat.
