I've been going oatmeal crazy lately, I'll admit it. Not to be overly dramatic, but oatmeal's been saving my life. For some strange reason, I've had little appetite at night, so a hearty bowl of hot oatmeal refills the tank when I wake up on empty. When getting out of bed seems near impossible (which it almost always does), I just think of the oatmeal that's waiting to get in my belly. Today's oatmeal recipe is quite the treat. Natural peanut butter & homemade blueberry chia seed jam gives this all the goodness of a pbj stirred into hot oats, which makes this a much healthier, grown up version of an old favorite.
MAKES 2 SERVINGS
- 1 3/4 cup milk
- 1 cup old fashioned rolled oats
- 1 heaping tablespoon natural crunchy peanut butter
- 4 tablespoons blueberry chia seed jam
In a small saucepan bring milk to a boil. Add in a pinch of salt & oats, reduce to a simmer & let cook, stirring occasionally, until oats are tender and most of the milk has been absorbed. Stir in your peanut butter until combined. Remove from heat & transfer into 2 bowls (or 1 bowl to eat now & a container to put in the fridge & eat later). Top each with 2 tablespoons homemade blueberry chia seed jam.
