Sometimes what we really need is not a recipe, not a health & nutrition fact, or a wellness incentive. Instead, what we need, is some inspiration. We need to see it ["it" being beautiful & delicious looking healthy foods] to light a spark within us. Inspiration is one of the main reasons I cook. Why guilt people into thinking they HAVE to eat healthy, when you can inspire people to WANT to eat healthy. I mean just look at that plate. You WANT to eat that plate of food.
In my opinion, breakfast is the perfect meal for inspiration. It's far too early for our brains to be functioning at top speed, so following a lengthy recipe is out of the question. Instead, get inspired, take control of the kitchen, and get those creative juices flowing! Also regular juices could be nice here, such as orange or cranberry.
Instead of a recipe, here are some ideas that I let take control of me in the kitchen yesterday as pictured above:
- POTATOES: Thin slice purple, yukon gold, and white russet potatoes. I was only cooking for one, so used just one very small version of each. Chop 1 or 2 slices of bacon & cook over medium high heat. When some fat has rendered throw in the potatoes and a little grassfed butter. Let cook, stirring occasionally, until potatoes are cooked through. Season with salt & pepper.
- EGGS: Fried in the same pan post potato trio in some more grassfed butter just until over easy
- VEGGIES: Sliced thin zucchini & red bell pepper cooked alongside the eggs
- FRUIT: Sliced strawberry for a tasty garnish
- COFFEE: Brewed & iced.
