My current obsession: Balsamic Chicken Burgers.
I know exactly what you're thinking... "Those sound excellent, but ain't nobody got time for that!" Well, I'm here to tell you that you do have time and these lovely burgers can be a part of your weekly routine. I make mine on Sunday Prep-Day, but these babies come together so quick you could make them any weeknight. They can also be as fresh as you want them to be. I've made them by grinding up my own fresh chicken breasts in a food processor and then mixing everything in, or by just buying the already ground stuff. Not only that, but these are just as good with ground turkey! Hello subtle variety.
Balsamic Chicken Burgers
What You Need:
- 2 Packs Ground Chicken (over 90% lean)
- 1 Medium Onion, Diced
- 0.5 TbspBalsamic Vinegar
- 0.5 Tbsp Dried Rosemary & Thyme
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- Kosher Salt & Crushed Black Pepper
- Olive Oil Spray
What To Do:
Heat a large saute pan over medium high heat. Spray with olive oil spray and toss in your diced onion. Let cook 2-3 minutes and add in a few splashes of balsamic vinegar (1 - 2 tablespoons). Stir & cook until the onions begin to caramelize (5-8 minutes).
In a medium sized bowl, put your ground chicken, dried rosemary & thyme, onion powder, garlic powder & season with salt & pepper.
Top with caramelized onions & mix until all ingredients are well incorporated. Here's where the fun starts.
Spray the same pan you used for the onions with olive oil spray. Use your hands to form your chicken burgers. Make a ball, flatten, and drop right into the pan. Cook 3-4 minutes, flip, and cook for another 3-4 minutes on the other side (or until cooked through)
Remove, let cool, & store in the refrigerator in an airtight container. YUM.
Enjoy these on their own, in a salad, or sandwiched inside a whole wheat bagel thin with some lettuce & tomato.
