Sunday rest days work a little different than workout days for me. There's something decadent, maybe even indulgent about them. I'm not sure if it's the relaxed atmosphere in the kitchen when I've got no place I need to be, the extra large cup of coffee I sip on, or the big ol' serving of fat I get in those rest day macros. Scratch that... I know what it is, it's definitely the fat.
My rest day go-to is a Kitchen Sink Egg White Omelette. I clear out all the veggies from the fridge, cook them up just right, pour in eggs & top it all off with some creamy avocado.
Kitchen Sink Rest Day Egg White Omelette
Omelette - Slice & dice your veggies (any will do). Spray a pan over medium heat with olive oil spray and cook veggies until desired doneness. Season with salt & pepper. Pour in 165g of egg whites (aka 6 egg whites) or whatever floats your boat. Let cook, fold, & flip.
Avo - Slice up 1/4 of an avocado (roughly 50g). Top with a squeeze of lime juice & a sprinkle of salt.
Coffee - Large, dark, & piping hot.
