To be honest with you guys, I don't technically know what a buddah bowl is. From what I've seen, they seem to be bowls of food, mostly veggies, protein, and grains all in one. I figured this bowl I made for lunch today qualified and thus the sweet potato buddah bowl was born.
For all my RP'ers out there, this lunch is actually 2 meals in one. I like to eat 4 meals before I workout, but 4 separate meals before I head over to the gym isn't always possible. Most workout days, meals 2 & 3 get smushed together into some type of bowl like this. It's just what werks for me on my twerk (work) days. *disclaimer... my job does not involve twerking.
Sweet Potato Buddah Bowl
Salad Base - Chop up 2 leafs of romaine lettuce & mix with a small handful of spring mix. Add in 1/2 of a small chopped up cucumber, shredded carrots, 1/2 small chopped up bell pepper, a couple sliced cherry tomatoes. Check veggies off your list.
Chicken - 6oz of leftover fajita chicken (just chicken breasts rubbed in my homemade taco seasoning & pan fried... don't worry, recipe coming soon) chopped up.
Taters - 175g of leftover roasted sweet potatoes (cubed & roasted over the weekend in a 425 F degree oven with a spray of olive oil & salt just until golden & beginning to caramelize)
Final Touches - Top with 0.5 oz of chopped nuts (I used cashews & almonds), 1/2 an avocado (diced), 35g blueberries, a sprinkle of dried oregano & basil, and a few splashes of white balsamic vinegar.
6oz protein / 3-4 handfuls of greens / 1.5 servings of fat / 40g carbs
