Sometimes I just can't wait until Tuesday for Tacos. I know Taco Tuesday is fun to say and hashtag on instagram, but I've never been one to enjoy being told when to or not to eat one of my favorite foods. The rule breaker inside me just needs to have Tacos on a Wednesday or a Friday or maybe even a monday ;P
These tacos are perfect for any day of the week. The important part of the recipe is the spice rub on the shrimp. It's got a little tang & a little kick, similar to my fajita rubbed chicken from last week. There's only one simple sauce made with greek yogurt to mellow out the spice and give your lettuce & cabbage a little less crunch and a little more flavor. The rest are just simple, fresh ingredients.
For the Shrimp:
- 1 bag thawed, uncooked shrimp
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- salt & pepper
- crushed red pepper (to taste/liking)
For the Cilantro Lime Sauce (Makes 3 Servings):
- 5.3 oz Chobani Greek Yogurt (plain, nonfat)
- 2 garlic cloves, minced
- Juice of 1 lime
- 1 tsp Cilantro Paste or 1 tbsp fresh cilantro
- 1/4 cup green onion, chopped
For the Tacos:
- Whole wheat soft tacos
- Romaine lettuce, shredded
- Red Cabbage, shredded
- Cherry tomatoes, halved or chopped
What To Do:
In a medium bowl mix together chili powder, cumin, paprika, onion & garlic powder, salt, pepper, and crushed red pepper. Make sure the spices are thoroughly mixed so you don't get a big glob of paprika on one shrimp and crushed red pepper to light your taste buds on fire on another.
Toss your shrimps in as much or as little spice mix as you want. I ended up using almost all of mine. I suggest starting with less and adding more based on how spicy or flavorful you want your shrimps. Heat a large skillet over medium high heat. Spray with some olive oil spray and add in half the shrimp. Cook for 2-3 minutes per side or until pink. Remove and repeat with the remaining shrimp.
In a small bowl, mix together the ingredients for your sauce. If you like it thinner, you can add some water or more lime juice.
Now that you've got your main pieces made, you can assemble. I took one whole wheat soft taco and smashed some avocado on top. Topped that with a sprinkle of romaine lettuce & red cabbage, a small handful of chopped tomatoes, and 2 or 3 shrimps. Dollop some of that sauce on top & viola! You've got Anyday Tacos.
