Once again, an Ambitious Kitchen recipe came to my rescue this week. I have this habit of finding a new food blog or instagram and binge scrolling through all their old posts. In my frantic scrolling last Thursday, I happened upon a ton of chicken ideas to try on my meal prep Sunday. This crockpot salsa chicken was one of them!
It's super simple, cheap, easy, and pretty mindless. You take boneless skinless chicken breasts, drop them in a slow cooker with a jar of salsa, sprinkle on some smoky chipotle chili powder, and let the crockpot do all the work for a few hours. I loved it because the chicken came out moist and tender and I didn't have to stand over the stove or hover by the oven to make sure it didn't overcook! Perfect for a busy prep-day-Sunday when you've got 5 other things cooking at once or any weeknight when you're running around.
The chicken goes great in burrito bowls, tacos, and on top of salads! Mine's all gone, gotta go make some more.
Crockpot Salsa Chicken
- 3 pounds boneless skinless chicken breasts
- 3 cups salsa (I used a combo of frontera roasted tomato salsa & dessert pepper trading co. pineapple salsa)
- 1.5 teaspoons chipotle chili powder
Place chicken, salsa, and chipotle chili powder in a crockpot/slow cooker. Cover and cook on low for 6-7 hours or on high for 3-4 hours. Once done cooking, remove your chicken & shred with 2 forks. You can return the chicken to the slow cooker to keep warm until ready to eat or transfer to airtight containers & pop them into the fridge to have shredded chicken all week!
