It's here! I know, you've been waiting so patiently for this recipe and all that waiting has finally paid off. The protein waffle is a gift tossed down from heaven. It's fluffy on the inside, yet crisps up & holds its own on the outside. It's sweet, but packs a nutritional punch. It's decadent AND guilt free. HELLO, I'LL TAKE ONE AND ONE MORE AND MAYBE ONE MORE AFTER THAT!
This recipe is another one slightly adapted from Ambitous Kitchen (an awesome blog with a bunch of awesome recipes that even a registered dietitian can get behind). I thought that the low fat cottage cheese and oats in the batter were ingenious AND the whole thing comes together so easy in a blender. That's my kind o' batter mixin'. Don't have a waffle iron? That's okay, this batter could definitely double as pancake batter!
I no longer have a big circle waffle iron, so I used a smaller cuisinart waffle iron that makes 4 square waffles at a time. I was feeding myself and a very hungry boyfriend so I doubled the batch & ended up getting 11 small square waffles. One serving is roughly 3 small square waffles or 1 large circle waffle. They stay in the fridge beautifully, just pop one in the toaster or into a toaster oven until it crisps up again! I bet they'd freeze great too.
Sweet Potato Protein Waffles
Makes 10-12 Small Square Waffles or 4 Large Circle Waffles
- 1 cup mashed cooked sweet potato
- 1 cup low fat cottage cheese
- 4 large eggs
- 2 tablespoons agave or light agave
- 2 cups old fashioned rolled oats
- 1 tablespoon plus 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Preheat & grease your waffle iron.
Add all ingredients to a high speed blender or food processor and blend until smooth. Your batter should be pretty thick. Pour into waffle iron in batches & cook according to waffle iron instructions.
Top with plain greek yogurt and fresh blueberries, a drizzle of natural peanut butter, or bananas, strawberries, & a hint of maple syrup. The topping possibilities are endless!
