Sometimes what we really need is not a recipe, not a health & nutrition fact, or a wellness incentive. Instead, what we need, is some inspiration.
It’s a hungry girl’s world and we’re all just living in it. … I’m not positive what that means, but today’s breakfast inspiration is for the hungry girl in all of us. Summer is comin’ in hott and that means fresh fruits and veggies are too! There’s no way I can possibly choose just one or two, so this breakfast gives you them all. It’s been my go to post Saturday morning sweat sessions at the gym or when I know I’ve got a long morning ahead of me and I need adequate fuel for what’s to come.
VEGGIES: I take thin sliced asparagus, mushrooms, peppers, and zucchini and sautee in olive oil over medium heat. When they’re almost done I throw in halved cherry tomatoes, spinach, and some fresh chopped basil and finish cooking until the spinach is wilted. I season with salt.
EGGS: After I take my veggies out of my pan, I hit it with some coconut oil spray and fry up 3 beautiful large eggs. I flip them once and lay them on top of my veggies. Gotta love a good runny yolk!
FRUIT & PB: Last, but certainly not least, I fill a small bowl or cup with fresh fruit and top with chunky peanut butter *drool*. Pictured here is raspberries, blueberries, a small strawberry, a few chunks of mango, kiwi, and orange topped with chunky crazy richard’s.
